WHEY BASED BIOPOLYMERIC COATING AS AN ALTERNATIVE TO IMPROVE QUALITY OF FRESH FRUITS (MALPIGHIA EMARGINATA D.C.) FROM SOUTHERN BRAZIL

Refrigeration and coating of active biopolymers are two potential approaches to extending the shelf life fresh fruits. Thus, aim this study was test influence storage temperature (5 10 °C ± 1 °C) whey concentration (edible coating), on functional, physical-chemical, microbiological characteristics acerola stored for 12 days. Edible coatings were produced using (30% 60%) glycerol. Samples compared a control (no during at both temperatures. Storage improved maintenance color, while 5 increased stability vitamin C decreased microbial growth (p ≤0.05). The application edible reduced total color variation degradation (a*) influenced significantly (p≤0.05) content (A10-60), mesophilic (A5-60 A10-60) psychrotrophic bacteria (A10-60) counts.
